The cuisine of Quanzhou is a blend of flavors with the world. The "Song and Yuan Maritime Silk Road Banquet" from Shishi, Quanzhou, is one of the representative works of Quanzhou's cuisine. This theme banquet is based on "Mountain Family's Clear Offerings" written by Lin Hong, a gourmet from Shishi during the Southern Song Dynasty. It closely combines the historical context of Quanzhou's culinary exchanges as a "world maritime trade center" during the Song and Yuan Dynasties, and deeply explores the wonderful fusion techniques of Shishi's mountain delicacies and sea flavors. It features 104 classic dishes carefully restored from ancient books. There are also outstanding works that boldly innovate local famous dishes from southern Fujian. The entire banquet covers multiple categories such as appetizers, soups, main courses, staple foods, and desserts, with a total of 128 exquisite dishes. It also incorporates famous dishes from southern Fujian, combining mountain delicacies and sea flavors in one table, and integrating elements of the Maritime Silk Road, trade, and religion. The dishes and banquets are perfectly matched with the vessels, scenes, music, and poetry of the Song and Yuan Dynasties, not only vividly demonstrating the profound essence of southern Fujian's culinary culture It also carries the profound heritage of the thousand-year-old Maritime Silk Road culture.
